I've been making this cucumber kimchi for years for friends at dinner parties and now, I'm offering it to you! I've been reluctant to offer cucumber kimchi because it doesn't have the shelf life of Napa or daikon kimchi. This will be made fresh each week and will have a shelf-life of about a week. 

The ingredients are Persian cucumbers, Tamari (gluten free soy sauce), sugar, gochugaru, ginger, garlic, carrots, yellow onion, green onion, and kosher salt. 

Pick this up along with some pickled daikon and KREAM Kimchi and all three will compliment whatever you are making!
